Department of Life Sciences Organizes a Training Course on Sorrel Plant and Methods of Preparing Extracts

The Department of Life Sciences at the College of Education for Pure Sciences – University of Samarra organized a training course entitled: “An Anatomical and Taxonomic Study of Sorrel (Family: Polygonaceae) and Methods of Preparing Extracts.” The course was delivered by Assistant Professor Dr. Hisham Fadel Shaker and Dr. Israa Abdulmajeed Abdulkarim.

The course aimed to introduce the anatomical and taxonomic characteristics of the sorrel plant, in addition to highlighting its multiple health benefits in treating various diseases, as it contains antioxidants and flavonoid compounds.

Dr. Shaker explained that sorrel contains numerous antioxidants and flavonoids; however, it should be consumed in moderation and in appropriate quantities due to its high levels of oxalic acid. Excessive consumption may interfere with calcium absorption, potentially leading to health problems.

Dr. Abdulkarim recommended that individuals suffering from kidney stones or joint problems (such as gout) avoid consuming it or consult a physician, as oxalates contribute to stone formation. She also advised consuming young (tender) leaves fresh in salads, while larger leaves are best cooked like spinach to reduce acidity.
